Breakfast in Turkish Culinary Culture

In the light of the oldest data, in the 10th and 11th centuries in Central Asia, there was no meal called breakfast in Turkish culinary culture. There were only two meals a day. One of them was the mid-morning meal. When we look at Turkish culinary history, people would deal with various farming and their animals when they woke up in the morning, and when the sun rose to the height of a spear, it would be mid-morning time. According to records, the mid-morning time from meal times was divided into three and these were called; Young mid-morning, middle mid-morning and late mid-morning. In the 11th and 23rd centuries, in some segments of Anatolian Seljuks, since Turks also started agriculture and gardening activities, which are the blessings of settled order, they made a transition to a richer breakfast meal by adding boiled or fried egg, fruit varieties and vegetable varieties to their mid-morning tables in addition to meat and meat products, milk and dairy products.

Breakfast in the Ottoman Period

In the 15th and 17th centuries during the Classical Ottoman period, the same habits continued and mid-morning tables were created with meatballs, dolma, börek, compote, jam and various desserts. Considering the financial situations of rural people and people living in cities, we can see that with the opening of the first coffeehouse in 1554, mid-morning tables transformed into even richer forms according to the economic situation of the people. This richness was reflected not only in mid-morning but also in evening meals, or in the Ottoman expression "akşam taam" meaning meals after afternoon. Looking at palace kitchen records, we can see that the habit of eating two meals a day continued in Ottoman palaces as well. From the 18th century onwards, the richness brought by the transition to settled order, as well as the entry of American-origin plants such as tomatoes, corn, green and red peppers into the Ottoman cuisine in the 18th century, and the effect of foods discovered through the development of trade routes cannot be ignored.
